Picky eaters need not be afraid they are eating frozen fruits and vegetables. Frozen and canned fruits and vegetables are packed at the peak of freshness. In many cases if stored for short periods of time at well controlled temperatures they are more nutritious than fresh picked. Fresh produce spends time losing nutrition on the grocery store shelf.
The process of Frozen Vegetables has been around for decades. It is a very popular way to make food that lasts for a very long time. Most people use foods that are very low in acid when canning vegetables. My favorite food while canning vegetables is either pickles or jalapenos,because they take the shortest period of time to prepare when canning vegetables compared to other items you may take all day preparing when canning vegetables.
When considering canned vegetables,especially jalapenos,remember to wear gloves. I cannot tell you enough how important gloves are. People tend to wipe their eyes as the jalapenos make eyes water and then their eyes sting even worse,it is absolutely horrible. If you have never canned vegetables before,you may want to do some research on which canner is best suited for you. Some people,when dealing with canned vegetables,enjoy the water canner. The water canner is nice and easy to use,but the steam canner is much easier and saves the person more time.
Once you hear the tops of the jars make a popping noise you know they are completely sealed and ready to go. I would then wait until they are completely cooled down before transporting the jars elsewhere. That is basically the process for Canned Fruit Cocktail. It is also good to know what level of hotness you enjoy as well,because the hotter you like it,the more peppers you will need in your specific batch. Plus certain recipes create larger or smaller batches,so depending on how many jars you want,you may have to find a specific recipe and or alter the one you find. I must warn you though,if you start making a lot of canned goods,you more than likely will find yourself making new friends,because canned goods are loved by many,and created by very few.
